Vegan Chicken Stir-Fry Recipe with TVP
Soak 2 cups TVP slices or chunks in 3 cups lightly salted boiling water. For about 5 minutes. I added 1/2 teaspoon turmeric to the water for kicks.
Drain and squeeze water out of the TVP.
Stir fry onions on high for 3 minutes then add TVP, reduce to medium heat and stir for about 5 minutes.
Add a couple of tablespoons minced ginger and 5 cloves minced garlic and fry another 3 minutes. Add a few spoons water if the TVP is sticking but not too much water.
Dilute 2 tablespoons Madras curry paste in water or coconut milk and add to the pan - (I used Humani-T's own locally made curry paste) Stir well and add 1-2 teaspoons lemon juice, stir again and turn off heat.
You can eat this dish as is, or use it as a base for other dishes. It would taste great in a tomato sauce or vegan butter chicken sauce poured over it and served with Basmati rice and the coconut salad below.

Delicious Sri Lankan Coconut Salad (Pol Sambol)
This mouth watering, spicy salad is super easy and fast to make. It is usually made with freshly grated coconut, but you can make a very good version with unsweetened desiccated coconut.
Add 1/4 cup boiling water to 1 cup shredded coconut, stir well, then cover the bowl and let it absorb the water. When it is cool to touch, add:
1 1/2 teaspoons hot chili flakes (or finely chopped red Thai Chili peppers.) Quantity can be adjusted to your heat preference. Remember that you are mixing small amounts of this with rice, bread or other foods that may not be spicy, so this salad could be made quite spicy
1/2 teaspoon seasalt
less than 1/4 cup finely chopped red onion (white onion if you must)
Juice of half a lemon
Combine everything well with back of a spoon to work the flavours into the coconut.
1/4 cup finely chopped tomatoes (optional)
1/8 cup finely chopped cilantro (optional)
Keeps in fridge 2-3 days
